A Day Late and A Dollar Short... But Better Late Than Never

I would have posted this yesterday, but I was not sure how the results would turn out. (I am always leery to lose your trust on account of a bad recipe.) In honor of Super Bowl and all things "manly" I decided to make Buffalo Chicken Dip. This was the embodiment of the football season. It was right at home with all our other annual football food, and it tasted straight-up like a buffalo wing (minus the bone and the messiness of course.) So here is how you make it:

Frank's Buffalo Chicken Dip
Ingredients:

8 oz. pkg. cream cheese, softened
(Low-fat)

1/2 cup blue cheese or ranch salad dressing
(I used low-fat Kraft Blue Cheese)

1/2 cup any flavor FRANK'S® REDHOT® Sauce

1/2 cup crumbled blue cheese or shredded mozzarella cheese
(I used the 4 cheese Mexican Blend--definitely not low-fat)

2 cans (12.5 oz. each) SWANSON® White Premium Chunk Chicken Breast in Water, drained

Directions:

Heat oven to 350°F. Place cream cheese into deep baking dish. Stir until smooth.

Mix in salad dressing, Frank's RedHot Sauce and cheese. Stir in chicken.

Bake 20 min. or until mixture is heated through; stir. Garnish as desired. Serve with crackers or vegetables.

*I made mine in a baby crockpot, and it turned out swimmingly.*

Pretzel Cones...The best thing since sliced bread

I have been on the hunt for these pretzel cones for some time.
They are so amazingly delicious! I do not really even like pretzels, but the cone itself is perfect. Mix those little salty bites of bliss with sweet dreaminess of ice cream, and you receive the easiest, most scrumptious dessert imaginable. Easy is the operative word! Well, I was driving around St. Matthews yesterday, and I noticed that Graeters has them! They were being advertised in the window. I highly recommend that you make your way there and try these cones, and if your Graeters doesn't have them, I don't think you'll be too disappointed. Graeters is great any way you eat it. A Happy Accident

The other night for dinner, I was going to make Tonga Toast from my "Cooking with the Disney Chefs" cookbook. Tonga Toast is like french toast except it can be described as deep fried deliciousness. Much to my chagrin, Scott walked in and frowned upon the idea of having such a dinner. So instead I made stuffed french toast (I still dipped it in the sugar, and that made it soo tasty!) Here is what you will need:

Ingredients:
-1 8 inch loaf sourdough bread (cut into 2" pieces)
-1/2 bar of cream cheese
-1-2 tablespoons of orange marmalade, depending on your liking
-5 eggs (beaten)
-1/3 cup sugar
-1 tablespoon cinnamon

Directions:
Mix cinnamon and sugar together in a bowl; set aside. Mix the cream cheese and orange marmalade; set aside.
Slice a slit into the bread, and spread about 1 1/2 tablespoons (or as much as you can stuff) into the bread.
Coat each piece of bread in the egg, and cook over medium heat until lightly browned. Immediately dip in the cinnamon sugar mixture.

And it's ready to eat. This was so tasty and very easy. Enjoy!
